This is my version of the classic guacamole with a sweet corn and mango twist. Guacamole is one of my favorite toppings and I enjoy experimenting with different creations. This guacamole recipe is extra creamy and delicious with the addition of the corn and mango. If you’re a guacamole fan and you also enjoy intense and delicious flavors, you’ll love this new alternative. This topping goes well with everything, especially barbeque recipes and savory grilled potatoes. It makes a spectacular match with pork tenderloin also! If you prefer, you can accompany this dip with just tortilla chips.

Ingredients

  • 1/2 cup diced onion
  • 3 tablespoons cilantro, finely chopped
  • juice of 1 whole lemon
  • salt to taste
  • 1 medium sized mango, peeled and chopped
  • 1 jalapeño pepper, finely diced
  • 1 cup corn, cooked
  • 3 avocados, peeled, cut into cubes and mashed

Directions

    In a medium sized bowl, add the onion, cilantro, lemon juice and salt; stir well.

    Next, add-in the mango, jalapeño, corn and mashed avocado. Mix to incorporate all the ingredients evenly. Disfruta!
