Pasta is one of those dishes that can be served on any occasion. This time, why not try out a variation on the classic macaroni and cheese, but with a toque of spice from the Poblano pepper? The results are wonderful! Macaroni and cheese itself is an easy dish to prepare, ideal at any time. It can act as the base for many recipes and is flexible for combining with almost anything. It won't fail to satisfy your hunger and is even vegetarian-friendly.

Ingredients

  • 2 Poblano peppers, roasted, peeled, without seeds and diced
  • 1/2 lb. macaroni pasta
  • 2 cups milk
  • 4 tablespoons butter
  • 2 tablespoons flour
  • Salt and pepper, to taste
  • 1 cup cheddar cheese, grated
  • 1 cup Monterrey Jack cheese, grated
  • 1/2 cup parmesan cheese, grated

Directions

    Fill a large pot with water and a bit of salt. Bring to a boil and cook the pasta for eight minutes or until it has an 'al dente' texture. When ready, drain and return to the pot.

    In a separate pot, melt the butter. Then add the flour and stir continuously.

    Next, slowly pour the milk over the flour mixture and bring to a gentle boil. Add the salt, pepper and let simmer for a few minutes while continuing to stir. The salsa should begin to look creamy.

    Last, stir-in the diced poblano peppers and grated cheeses. Mix well and combine with the cooked pasta.

    To the side, grease an oven-proof casserole (or glass) dish. When you're finished mixing the cheese salsa with the pasta, transfer the final mixture to the casserole dish. Sprinkle with parmesan cheese and bake at 350°F until the cheese begins to turn golden-brown (about 15 minutes.) Buen provecho!
