Lamb Chops with Mint Pesto

One of my biggest weaknesses is that I love food. That's why I have dedicated myself to learning about the world's gastronomy. I like simple, homemade and traditional food, but I truly enjoy preparing a gourmet dish from time to time and accompanying it with a good glass of wine. I love lamb (among other things) in its different cuts: ribs, crown, leg, and chops... anyway you give it to me! Its unique flavor, aroma and soft texture make your palate experience exciting sensations. One of my favorite recipes is Lamb Chops with Mint Pesto. Ingredients

  • 8 individually cut lamb chops
  • 1 tablespoon olive oil
  • 1/2 teaspoon dry thyme
  • 1 teaspoon dry oregano
  • 1 teaspoon dry rosemary
  • 1/2 teaspoon salt
  • 1 teaspoon fresh pepper
  • Mint pesto, to taste

Mint pesto:

  • 2 garlic cloves
  • 1/4 cup pine nuts
  • 3/4 cup fresh basil leaves
  • 1 1/2 cups fresh mint leaves
  • 3/4 cup grated Italian parsley
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground pepper
  • 1/4 cup extra virgin olive oil

Directions

    Preheat the oven to 375°F.
  • 2
    Brush olive oil on lamb chops.
  • 3
    In a small container combine thyme, oregano, rosemary, pepper and salt. Cover the lamb with this mix and let it stand to room temperature for about 10 minutes.

    Prepare mint pesto. Add all of the ingredients little by little in a food processor and mix them. Add the olive oil little by little until you get the desired consistency.

    Sear chops on a very hot grill for 2 or 3 minutes per side.

    Place lamb chops on baking tray; bake in oven for about 25 minutes. Lamb chops should be pink inside, not completely cooked.

    Before serving, brush with mint pesto on top.
