Ladyfinger-Ice Cream Dessert

Ingredients

  • 34 soft ladyfingers (from two 3-oz packages)
  • 2 cups strawberry ice cream
  • 2 cups vanilla ice cream
  • 2 cups fresh raspberries
  • 1/3 cup sugar
  • Fresh mint sprigs, if desired

Directions

    Place ice cream in refrigerator for 30 minutes to soften.

    To assemble the dessert, place rounded sides of 7 whole ladyfingers vertically along each long side of 9x5-inch loaf pan pan, and 3 ladyfingers vertically along each short side of pan. (If ladyfingers are too long, cut tops and keep pieces for layering.) Spread softened strawberry ice cream in bottom of pan inside ladyfingers. Lay 7 ladyfingers flat over top of ice cream. Layer vanilla ice cream over ladyfingers. Lay remaining 7 ladyfingers flat over top of ice cream. Cover; freeze at least 4 hours or overnight.

    Two hours before serving, in medium bowl, mix raspberries and sugar.

    Place serving plate upside down over loaf pan; turn plate and pan over to remove dessert. (If needed, place warm towel on pan to unmold.) Remove pan. Top with raspbery mixture; garnish with mint springs.
