Cut the onion in very thin slices.

In a pan over low heat, melt the butter with the oil. Add the onions and sauté until they begin to brown, stirring occasionally.

Add the sugar, and keep stirring until a caramel forms. Remove from the heat.

Spread one side of the bread with mustard. Add the cheese and cover with the caramelized onion and the jalapeño slices.

Put the other slice of bread on top and grill in a grilled cheese sandwich maker for 5-10 minutes, or until done.

If you don’t have a grilled cheese sandwich maker, toast for 10 minutes in the oven at 350°F, with the top slice of bread on the side. Otherwise, you can make it in a skillet with some oil, pressing with a spatula. Turn once or twice.
You can cook the jalapeños with the onions for a milder effect. Or add more fresh jalapeños for a stronger effect.
To make your life easier, you can use only one kind of cheese for this sandwich instead of two. Most cheeses will go well with jalapeño peppers.
