Ice Cream Sandwich with Lärabar™

Ice cream sandwiches are absolutely delicious. Those with a serious sweet tooth will probably always choose these over ice cream alone, since it's really two desserts in one. What more could you ask for? Two months ago I decided to eliminate sugar from my diet altogether, but that doesn’t mean I plan on giving up on desserts for the rest of my life. The only difference this makes is that now I have to look for new ways to prepare my favorite desserts using natural ingredients without added sugar. Lärabar® energy bars are a great alternative and I plan on experimenting with them more in the future by using them as pastry dough, for example. These bars also inspired me to prepare this ice cream sandwich that besides being vegan is also gluten free and "raw."

Ingredients

  • 1 large banana, ripe
  • 1/2 cup of coconut milk
  • 3 bars pecan pie LARABAR™ fruit and nut food bar (or of your choice)
  • Raspberries to decorate (optional)

Directions

    Combine the banana with the coconut milk in a blender until completely creamy and there are no pieces of banana left.

    Put the cream in a bowl and put it in the freezer for 4-5 hours or until it freezes.

    Half an hour before serving, cut the Lärabar bars in half and flatten each half to form a medium-sized circle. The silicone muffin tins are perfect for this. Put in the freezer for half an hour to make firm.

    Place a Lärabar circle on a plate. Put a scoop of ice cream on top, and cover it with another circle.

    Garnish with raspberries or other berries (optional).

Expert Tips

  • tip 1
    Another way to easily make these sandwiches is using metal rings. Place half a bar inside the ring, and flatten with fingers to take the shape of the ring. Top with a scoop of frozen ice cream, and press with a spoon to take the shape of the rim. Freeze some more so the ice cream cools, then add the third layer of bar and pressure with fingers again. This freezes well, and when firm, run a knife around inside the ring and remove it carefully.

    To make the banana ice cream, you do not even need to add the coconut milk. You can simply liquefy until the banana turns to cream and freeze. In this case, however, the result will be sweeter.
