Hot Cross Bun Muffins

Traditionally eaten during Lent, hot cross buns are sweet buns made with dried fruit. They feature a cross piped of icing and are made using yeast. For those who are nervous to work with yeast, we’ve decided to simplify the recipe and create a hot cross bun muffin, which still features all the beloved flavors of a traditional hot cross bun but without using that ingredient. Ingredients

For the dough:

  • 1 cup raisins
  • 2 cups hot water
  • 2 1/2 cups Gold Medal™ flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoons ground cloves
  • 2/3 cups vegetable oil
  • 1 cup milk
  • 2 eggs
  • 1 cup sugar

For the icing:

  • 1 1/2 tablespoon butter
  • 1 cup marshmallows
  • 1/4 cup milk
  • 3/4 cup confectioner’s sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

    For the dough:

    Preheat oven to 350 °F. Generously spray a muffin pan with non-stick cooking spray. Soak raisins in hot water for 5-8 minutes, until plump. Drain.

    In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg and cloves. In a separate bowl, whisk together oil, milk, eggs and sugar until smooth. Add to dry ingredients and whisk until smooth and stir in raisins.

    Fill muffin pan with batter and bake for 20 minutes or until a toothpick inserted comes out clean. Let cool while you prepare the icing.

    In non-stick pan over low heat melt butter, marshmallows and milk; stirring until smooth. Add confectioner’s sugar, vanilla and salt; stir until smooth. Use a spoon to draw a cross on each muffin, serve.
