Ingredients

  • 4 (6-oz) salmon fillets
  • Salt, as desired
  • Pepper, as desired
  • 3 cloves garlic, finely chopped
  • 1/4 cup honey
  • 1 lemon (zest of whole lemon plus 2 tablespoons of the juice)
  • 2 tablespoons olive oil
  • 4 sprigs fresh oregano

Directions

    Heat oven to 350°F. Line shallow baking pan with foil.

    Place the salmon fillets down the center of the baking pan. Season with salt and pepper.

    Mix the garlic, honey, lemon juice and olive oil in a small bowl until the honey has dissolved. Brush the salmon evenly with honey mixture. Place the oregano sprigs on salmon.

    Fold both sides of the foil over to completely cover the salmon, creating a kind of envelope.

    Bake for 25 to 30 minutes or until the salmon flakes easily with fork. Garnish with lemon zest. Serve immediately.
