Halibut mango ceviche is a truly refreshing dish full of flavor and color. It’s a white fish ceviche mixed with fresh ingredients such as mango, parsley, lime, cilantro and onion. You can make it for home or to take to a meeting or get-together. If you take it to a get-together I recommend serving it in a Martini glass, as the color of the ingredients will make it look really nice. Ingredients

  • 1 1/2 pounds of skinless boneless halibut cut into 1/2 inch cubes
  • 1/3 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1/4 cup tequila
  • 3 seedless and chopped jalapeños
  • 1 peeled and diced mango
  • 1 green bell pepper seeded and finely chopped
  • 1 Vidalia onion or other sweet onion
  • 1/2 cup finely chopped red onion
  • 1 peeled and diced mango
  • 1/2 bunch fresh chopped cilantro
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt or to taste

Directions

    Combine halibut, lime juice, lemon juice, tequila, chopped jalapenos, and 1 diced mango in a non-metallic bowl. Cover and refrigerate for 1 1/2 hours.

    After the ceviche has been sitting for 1 1/2 hours, add the green pepper, sweet onion, and red onion. Mix well, cover and refrigerate another 30 minutes.

    Mix in the rest of the mango, cilantro and parsley. Season to taste with salt before serving.
