Last week I made this tasty cauliflower-based vegetarian ceviche, with avocado and lime. It’s full of flavor and a tasty alternative for those who do not eat fish or seafood. Its taste doesn’t take a back seat to traditional ceviche. Although we are not vegetarians at home, we do enjoy a few days without meat. For this ceviche, I used a versatile ingredient that goes a long way in many dishes: cauliflower. I hope you enjoy this vegetarian ceviche and encourage you to make it at home soon. MORE + LESS -
