Chicken is one of the most budget-friendly and versatile choices available at the butcher shop. I like to marinade and grill it with different sauces to add variety to our menu and everything I bring to the table. Today, I'm sharing one such grilled chicken recipe with a peanut sauce; it's simple, quick to put together and loaded with flavor.

Ingredients

  • 5 tablespoons peanut butter
  • 5 tablespoons water
  • 1 tablespoon soy sauce
  • 1 tablespoon oil
  • 1 tablespoon honey
  • 1 tablespoon apple vinegar
  • 1/4 - 1/2 chopped jalapeño, deseeded
  • 1 lb boneless chicken breast

Directions

  • 1
Put all the ingredients, minus the chicken, in a food processor or blender. Process until a creamy sauce is obtained. Taste to check the seasoning and add salt or more jalapeño, if necessary.
  • 2
Cut the chicken breast in 16 equal pieces and mix with half the peanut sauce, completely covering each piece. Refrigerate for 2 hours.
  • 3
Heat the grill to medium-high heat.
  • 4
String the pieces of chicken on a skewer and grill for 4 minutes on all 4 sides (about 16 minutes), or until the chicken is completely cooked.
  • 5
Serve with the reserved peanut sauce.

  • Try pairing this chicken with chopped peanuts and rice, or grilled veggies.
