These Easter Eggs filled with chocolate mousse will be the center of attention at any table. They're nice to look at and delicious! I love this recipe because it's not very sweet. But you can also adjust to taste the amount of sugar used in the recipe. For this recipe, I used large chocolate eggs. You can, however, make smaller portions using small chocolate eggs, which are perfect for the Easter celebration at your child's school. Happy Easter!

Ingredients

  • 1 cup whipping cream
  • 4 tablespoons powdered sugar
  • 15 oz ricotta cheese
  • 4 tablespoons cocoa powder
  • 2 tablespoons sugar
  • 2-3 large chocolate Easter eggs, cut in half
  • Small Easter eggs to decorate (optional)

Directions

    Whip the cream in a blender at high speed until it forms smooth peaks. Add the powdered sugar and continue whipping until the cream forms hard peaks, approximately 3-4 minutes. Set aside.

    In another bowl, whip the ricotta cheese until smooth. Add the cocoa powder and sugar; mix well.

    Carefully fold the Ricotta mix into the whipped cream.

    Spoon the mousse into each large chocolate egg. Refrigerate for at least 30 minutes.

    Decorate with small Easter eggs if you like, and serve immediately.
