Dominican Repollo Guisado

This Dominican repollo guisado will become one of the most coveted dishes of your family and friends. Made with fresh ingredients and easy to prepare, it will also be one of your favorite dishes to cook and serve.


  • 2 tablespoons vegetable oil
  • 1 medium white onion, finely chopped
  • 1 yellow bell pepper, diced
  • 1 garlic clove, finely chopped
  • 3 cups green cabbage, cut into thin strips
  • 3 cups purple cabbage, cut into thin strips
  • 1 can (8 oz.) tomato puree
  • 2 lemons

    Heat the oil in a large casserole over medium-high heat. Sauté the onion and the yellow bell pepper for 2 to 3 minutes until the onion is translucent. Add garlic and sauté for another 30 seconds.

    Add green and purple cabbage; sauté for 5 minutes, stirring occasionally.

    Add the tomato puree and the juice of 2 lemons. Season with salt and black pepper, to taste.

    Cover casserole and reduce to low heat. Cook for 12 to 15 minutes or until the cabbage is completely cooked.

  • Give this dish a spicy touch by adding 1 tablespoon of chipotle puree with the tomato puree.
