cup milk

cups Progresso™ plain bread crumbs

cup shredded coconut
Lime zest from 1 lime

    Pre-heat oven to 425ºF. Line a baking sheet with flour and generously coat with cooking spray.

    Place flour in a shallow baking dish.

    In another shallow baking dish, whisk together eggs, milk, and mustard.

    Combine breadcrumbs, pepper, salt, coconut, and lime zest in another shallow baking dish.

    Dredge mojarra pieces in flour. Tap to remove excess flour, dip in egg for a few minutes and coat in coconut breadcrumb mixture.

    Place on baking sheet. Bake for 12-15 minutes or until fish flakes easily with a fork.

Expert Tips

  • Spice it up by adding chile powder to the breadcrumb mixture or make a quick sauce by whisking together tartar sauce and hot sauce to serve on the side.
