This refreshing colorful cabbage ceviche is about to become your favorite salad. With vibrant colors like green, purple, orange and red, this cabbage salad will brighten your lunchtime table. The taste of the cabbage and the carrot along with the lemon juice is simply exquisite. This cabbage ceviche is a delicious salad for a light lunch, but you can also serve as a side dish to accompany your favorite tacos.

Ingredients

  • 2 cups green cabbage, cut into thin strips
  • 2 cups purple cabbage, cut into thin strips
  • 2 cups grated carrot
  • 3 Roma tomatoes, finely chopped
  • 1 medium white onion, finely chopped
  • 1 to 2 serrano peppers, finely chopped
  • 1/2 cup fresh cilantro, finely chopped
  • 6 to 8 lemons
  • 1 teaspoon salt

Directions

    In a large bowl mix the green cabbage, the purple cabbage and the grated carrot.

    Add the tomato, onion, serrano pepper and cilantro, stirring to mix well.

    Add the juice of 6 to 8 lemons; season with salt.

    Refrigerate for at least half an hour before serving. Accompany with toast or totopos.

    For a not-so-spicy ceviche, remove the seeds from the serrano pepper before chopping them.
