Arroz con pollo, or rice with chicken, is a Colombian gastronomic classic. Not only because there are no two ingredients that go together better than chicken and rice, but also because Latin chicken and rice is an easy , tasty recipe that yields many portions. This dish is often synonymous with having guests over, creating a family reunion and sharing stories alongside authentic Colombia flavor. Many say the seceret to a successful Columbian chicken and rice recipe is the time you put into it. But we believe the most important ingredient is the love that gets poured in with every step.

Ingredients

  • 3 tablespoons canola oil
  • 1 large red pepper, diced
  • 1 large yellow pepper, diced
  • 1 large green pepper, diced
  • 1 garlic clove, crushed
  • 1 medium onion, diced
  • 3 cups long grain white rice
  • 5 cups water
  • 4 cooked boneless skinless chicken breasts, chopped
  • 2 cups frozen mixed vegetables
  • 1 chicken bouillon cube
  • 1 packet Sazón GOYA® con Asafran seasoning
  • Salt, as desired

Directions

    Heat oil in a large pot over low heat. Add the peppers, garlic and onion. Cook and stir until golden brown.

    Add the rice; stir to combine.

    Add all remaining ingredients; stir. Cook over medium heat about 15 minutes or until the liquid is absorbed.

    Once rice has absorbed all the water, cover and cook on low heat for 10 to 15 minutes until the rice is tender.
