Cold Cut and Cheese Roll Ups with Fruit and Yogurt Salad

My grandfather Antonio taught me many things. I grew up hearing stories about his beloved Lugo in Galicia, and about the natural and nutritious things the countryside has to offer. I used to love running over to him when he prepared cold cuts and cheese for friends and neighbors who visited the house. My fun lay in rolling up every cold cut slice with cheese and tasting it with a slice of bread. I still like it to this day and so does my family. That is why the all-time favorite starter in my home is a roll-up of cold cuts and cheese like the ones I show you here. They’re simple and fast to make, and easy to carry in the lunch box (Place lunch with Ice packs in an insulated lunch box).

Ingredients

  • 2 slices of fat-free sweet ham
  • 2 slices of turkey ham
  • 2 slices of salami
  • 2 slices of sausage
  • 4 thin slices of yellow cheese
  • 4 thin slices of white cheese
  • 8 bran crackers to go with it
  • 1 cup of various colored fruit
  • 2 teaspoons of brown sugar
  • 1/2 tube of Yoplait® Go-GURT®
  • 1 cup of veggie chips

Directions

    Make the cold cut and cheese roll-ups, alternating between each meat and the cheeses.

    Mix the fruit with the yogurt and the brown sugar, like a fruit salad.

    You can make the cold cut and cheese roll-ups even more appealing if you add color and flavor by wrapping them around a Betty Crocker® Fruit Roll-Ups®. Arrange them in a little box. You can place them horizontally if you make them longer, or vertically if you cut them at the appropriate height. Don’t forget to put the salad in another container, and you can surround it by a wall of cookies.
