Have you ever tried coconut kisses? They're little candies that are crunchy on the outside and soft inside, delicious! This coconut recipe is one of my favorites and I prepare them whenever I can to satisfy my craving for a little something tropical. I also tend to prepare them for my friends and neighbors on special occasions or Christmas parties.

Ingredients

  • 5 1/2 cup of unsweetened shredded coconut
  • 3/4 cup of Gold Medal™ all-purpose flour
  • 3 egg whites
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 5 oz of pastry chocolate

Directions

    Preheat the oven to 325°F and cover two baking trays with parchment paper.

    Beat the egg whites and mix vigorously with sugar, vanilla and salt until if foams and the sugar is dissolved, add the flour and mix until well incorporated.

    Add the coconut and mix in with a spatula until the ingredients have combined with the coconut.

    To make the kisses, you can use an ice cream scoop and make small bundles on the tray separated by 1 inch. You can also use a pastry sleeve with a wide opening.

    Bake for 20-25 minutes and rotate the tray in the oven so they bake evenly.

    Remove from the oven and let cool completely.

    Finally, melt the chocolate in the microwave. Pour it into a plastic bottle with a very small opening and pour over each sweet.

    These sweets can be reserved in a container with a lid for up to 5 days.

    You can also use white chocolate.
