Coconut Flan with Strawberry Sauce

All the flavors of spring in every bite. A creamy coconut flan is topped with a vibrant strawberry sauce to create an amazing end of meal treat.

Ingredients

  • 1/2 cup sugar
  • 1/4 cup water
  • 3 eggs
  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 cups coconut milk
  • 2 teaspoons vanilla extract
  • 1 cup sliced strawberries
  • 2 tablespoons sugar
  • 1 tablespoon water
  • 1/4 cup shredded coconut flakes, toasted, for garnish

Directions

    Preheat oven to 325° F.

    In a nonstick pan over medium-high heat cook sugar and water, stir and allow sugar to caramelize, about 5-7 minutes.

    Pour caramel into 6 (8 oz) ramekins then place ramekins in large roasting pan.

    In a large mixing bowl mix together eggs, sweetened condensed milk, coconut milk and vanilla extract.

    Evenly divide flan custard between ramekins.

    Place roasting pan in oven and carefully pour hot water into pan to come halfway up the sides of ramekins.

    Bake 30-35 minutes.

    Use tongs to carefully remove ramekins from roasting pan and place on rack to cool for 10 minutes, then place in fridge to chill for at least four hours.

    While flans chill make strawberry sauce. In a small saucepan bring sliced strawberries, sugar and water to a simmer.

    Simmer, stirring often for ten minutes.

    Remove from heat and cool completely.

    Once flans have cooled run a sharp knife around inside of each ramekin and invert onto plate.

    Serve with strawberry sauce and garnish with toasted coconut.

  • Swap it out – Use blueberries or blackberries to make the sauce. Drizzle this sweet sauce over ice cream, pancakes or waffles.
