Even rice, a typical side dish for many Latin meals, gets a holiday makeover: a touch of sweetness with a hint of tropical flavor plus a handful of crunch. Ingredients

  • 2 cups rice
  • 2 cups coconut milk (unsweetened)
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/4 cup fresh lime juice
  • 1/2 cup dried cranberries
  • 1/2 cup pepitas

Directions

    Rinse and drain rice in cold water. In a saucepan, place rice, coconut milk, water and salt.

    Stir to combine; bring to a boil. Reduce heat to low, stir and cover. Cook for 15-18 minutes or until all the liquid has been absorbed.

    Remove lid, fluff with fork. Add lime juice, cranberries, and pepitas. Stir to combine; serve.

    To obtain a stronger coconut flavor, use coconut water instead of water and garnish with toasted coconut flakes.
