During the holiday season, meals tend to taste sweeter. Families spend more time in the kitchen baking or preparing delicious meals for neighbors, friends and family from out of town. Even rice, a typical side dish for many Latin meals, gets a holiday makeover: a touch of sweetness with a hint of tropical flavor plus a handful of crunch. This sweet rice will make a splash at your holiday table!

Ingredients

  • 2 cups rice
  • 2 cups coconut milk (unsweetened)
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/4 cup fresh lime juice
  • 1/2 cup dried cranberries
  • 1/2 cup pepitas

Directions

    Rinse and drain rice in cold water. In a saucepan, place rice, coconut milk, water and salt.

    Stir to combine; bring to a boil. Reduce heat to low, stir and cover. Cook for 15-18 minutes or until all the liquid has been absorbed.

    Remove lid, fluff with fork. Add lime juice, cranberries, and pepitas. Stir to combine; serve.

    To obtain a stronger coconut flavor, use coconut water instead of water and garnish with toasted coconut flakes.
