Ingredients

cups coconut milk (unsweetened)

cup water

teaspoon salt

cup fresh lime juice

cup dried cranberries

cup pepitas

    Rinse and drain rice in cold water. In a saucepan, place rice, coconut milk, water and salt.

    Stir to combine; bring to a boil. Reduce heat to low, stir and cover. Cook for 15-18 minutes or until all the liquid has been absorbed.

    Remove lid, fluff with fork. Add lime juice, cranberries, and pepitas. Stir to combine; serve.

Expert Tips

  • To obtain a stronger coconut flavor, use coconut water instead of water and garnish with toasted coconut flakes.
