Chocolate Marble Buns

One of my favorite bakeries in Lima sells (on special order) these marble buns that may be used to make little chicken sandwiches. They’re so cute that one day I decided to make a somewhat sweet version, and added chocolate chips to some of the dough. This recipe is very easy to make, though it does take a little time, much like any dough that has yeast in it. But it’s well worth it. If you’re planning a special get-together, this is the perfect recipe. These buns will make your table look beautiful.

Ingredients

  • 3 1/3 cups flour
  • 3 teaspoons active dry yeast
  • 1 teaspoon salt
  • 2 tablespoons brown sugar
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons cocoa
  • 1/2 cup chopped chocolate (or chocolate chips)
  • 1 egg
  • 2 tablespoons water
  • 1 tablespoon coarse sugar for garnish, if desired

Directions

    You will need to prepare two doughs. For the first dough: Place 1 3/4 cups of flour, 1 1/2 teaspoons of yeast, 1/2 teaspoon of salt and 1 tablespoon of sugar in the blender jar. Set it to the knead/mix setting, and mix everything together.

    Slowly add 1/2 cup of milk and 1 tablespoon of butter. Knead on medium speed for 4 minutes or until it no longer sticks to the edges of the jar. If it’s too dry, add 1 tablespoon of milk, and continue kneading.

    Transfer this dough to a floured bowl. Cover with a clean kitchen cloth and leave it in a warm place for 20 minutes.

    For the second dough: Repeat the previous process, but this time add the cocoa to the flour. While you’re kneading the dough, add the chopped chocolate or chocolate chips.

    Transfer this dough to a floured bowl. Cover with a clean kitchen cloth and leave it in a warm place for 20 minutes.

    Once the time is up, both doughs should have risen. Transfer to a floured table, knead a little and cut each into 8 equally-sized portions. While you work on one portion, keep the others covered with a kitchen cloth.

    Shape dough into approximately 5-inch-long cylinders. Take a cylinder from the first dough and alternate with one from the chocolate dough; roll up into a spiral. Bring together like a doughnut and place on a baking sheet lined with silpat or parchment paper. Repeat with the rest of the dough. Cover the buns with a kitchen cloth and let rest for 20 minutes.

    Preheat the oven to 375° F.

    In a small bowl, combine the egg and two tablespoons of water. Use a cooking brush to coat each bun. Sprinkle with coarse sugar.

    Bake the buns for 20 minutes.

    Instead of making marble buns, you may use each dough separately and bake them as round buns. You will get 8 of each color.
