Chicken and Peppers in Red Wine Sauce

This simple and delicious recipe is one of my favorites - even more so now that the weather subjects us to low temperatures, and the cold air calls for dishes with a warm flavor. It reminds me of my native city of Bogotá and those unforgettable lunches at my parents’ - back when calling ahead wasn’t necessary to enjoy a tasty chicken in red wine sauce. This delicious recipe can turn simple chicken drumsticks into a scrumptious dish. My mother and, of course, I (as I follow all of her advice) prefer using chicken drumsticks for this dish, since not only do they keep their shape when you cook them, but they are able to better capture the recipe’s flavor. Ingredients

  • 8 medium chicken drumsticks (skinless or not, depending on preference)
  • Sea salt to taste
  • 2 tablespoons olive oil
  • 4 cups water (approximately)
  • 1 medium red pepper, chopped
  • 1 medium green pepper, chopped
  • 1 medium yellow pepper, chopped
  • 2 small garlic cloves, minced
  • 2 medium onions, chopped
  • 1 teaspoon fresh or dry basil
  • 1 cup red wine
  • 2 tablespoons soy sauce

Directions

    Season chicken with sea salt and olive oil. Let marinate for at least an hour.

    Place chicken in a pot over medium heat. Add enough water to cover chicken. Let cook for 30 minutes. After 30 minutes discard water.

    Add two cups of water again; immediately add the three peppers, garlic, onion and basil. Cover the pot and cook over medium heat for another 20 minutes.

    Lastly, add red wine and soy sauce. Cover. Let cook over low heat for 10 minutes more. The chicken sauce should be pretty thick.

    Stir repeatedly and very carefully to keep chicken from falling apart.

    Serve with a side of white rice and cooked carrots.

    Suggest allowing chicken to season overnight in the refrigerator, so that it better absorbs salt.

    If, when chicken is cooked, the chicken sauce is not as thick as you’d like, you can add a teaspoon of white-wheat flour.
