Our cauliflower tortillas are the ultimate veggie lover's delight. Packed with grated cauliflower, these tortillas are the perfect lunch or dinner treat. We enjoy ours stuffed with rajas de poblano. Use the large holes in your cheese grater to easily grate cauliflower for this recipe.

Ingredients

  • 2 cups corn flour for tortillas
  • 1/2 cup grated cauliflower
  • 1/4 tablespoon of salt
  • 1 cup water

Directions

    In a bowl, combine corn flour, grated cauliflower, salt and water.

    Knead to form a smooth dough.
  • 3
    Divide dough into 16 portions and roll into smooth balls.

    Place one at a time onto a tortilla press lined with plastic film or plastic bag, press firmly.

    Cook on a preheated comal or grill for two minutes on each side. Serve warm.

    Instead of using a cheese grater you can also run the cauliflower through a food processor for a smoother blend.
