Ingredients

  • 3 cups water
  • 4 cups raw cauliflower rice
  • 1 egg
  • 1/2 cup Parmesan cheese, grated
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/4 teaspoon Italian herbs
  • 4-6 oz shredded mozzarella cheese

Directions

    Add 2 cups of water to a large pot and let boil. Add the raw cauliflower rice, cook for about 4-5 minutes and strain through a fine mesh colander.

    Place the cauliflower on a thin and clean kitchen towel and let cool. Wrap the cauliflower in the towel and wring out the extra moisture with your hands. Wring until no more water comes out.

    Preheat the oven to 450°F. Cover a cookie sheet with parchment paper.

    Mix the cauliflower, egg, cheese, salt, pepper and Italian herbs. Mix well with your hands until everything is well combined.

    Stretch the dough over the paper until you have the crust.

    Bake for 20 minutes or until the crust is firm and browned.

    Remove from the oven carefully. Add the cheese and bake for 5 more minutes or until the cheese has melted and browned.

    Let sit for 5 minutes and serve.

    You can decide on how thick you want the crust, but I recommend not making it too thin. 1/3 inch high works well.
