Ingredients

  • 2 teaspoons olive oil
  • 1 turkey breast tenderloin (1/2 lb), cut into 1-inch pieces
  • 1 small onion, coarsely chopped (1/4 cup)
  • 1 clove garlic, finely chopped
  • 2 small red potatoes, cut into eighths (3/4 cup)
  • 1/2 dark-orange sweet potato, peeled, cut into 1-inch pieces (3/4 cup)
  • 1 can (14 oz) reduced-sodium chicken broth
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon pepper
  • 1 dried bay leaf
  • 1/2 cup frozen baby sweet peas, thawed

Directions

    In 3-quart saucepan, heat oil over medium-high heat. Add turkey, onion and garlic; cook 4 to 5 minutes, stirring frequently, until onion is softened.

    Stir in remaining ingredients except peas. Heat to boiling. Reduce heat to medium-low; cover and cook 15 minutes or until potatoes are tender and turkey is no longer pink in center.

    Stir in peas. Cover; cook 2 to 3 minutes, stirring occasionally, until peas are hot. Remove bay leaf.
