Summer salads are fresh and delicious, it's also the best season to enjoy some time in the backyard and invite people over for a BBQ. This is why I want to show you how to prepare a fresh grilled peach sal-ad served with slices of mozzarella cheese and balsamic vinegar extract. This salad is inspired by the Italian caprese salad, but with a twist. I hope you like it!

Ingredients

  • 4 fresh peaches, sliced
  • 1 teaspoon olive oil
  • 8 slices of mozzarella cheese
  • 24 fresh basil leaves
  • 1 cup balsamic vinegar commercial reduction
  • Salt and pepper to taste

Directions

    Place the slices of peach on a dish and sprinkle with olive oil on both sides.

    Turn on your grill and when it reaches 350°F add the peaches and grill on both sides until you have the grill marks on them.

    To create the salad place the grilled peaches on a dish, add the slices of mozzarella and fresh basil. Finish by sprinkling with vinegar reduction and serve as an appetizer.

Expert Tips

  • tip 1
    You can use liquid balsamic vinegar instead of the reduction. If you can't find the reduction, simply make it home by cooking one cup of balsamic vinegar with one cup of honey over medium heat and reduce until you have syrup.
