Brownie and Mint Cheesecake Dessert

Cheesecake is one of my favorite desserts. Easy to make and delicioso, I serve it for a number of different occasions. Today, I bring you a good example of one of my cheesecakes: a brownie and mint cheesecake dessert. It’s perfect for Christmas Eve or Christmas dinner! Your guests will be surprised by the combination of rich flavors and textures; it's both appetizing and original. It's always a good idea to serve dessert in small dishes or cups; when the portions are pre-calculated and have already been rationed out, that means less chaos for us at serving time.

Ingredients

For the brownie:

  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • Water, vegetable oil and eggs, according to brownie package instructions

For the cheesecake:

  • 16 oz cream cheese, at room temperature
  • 1 14-oz can condensed milk
  • 1 teaspoon mint extract
  • Pink food coloring, to taste
  • White, mint chocolates, chopped into small pieces

Directions

    For the brownie: Preheat the oven to 350°F (325°F if using a dark or nonstick pan).
  • 2
    Cover the bottom and sides of a 9-inch, square baking sheet or pan with aluminum foil. Spray the aluminum foil, covering the bottom of the pan only, with cooking spray. Prepare and bake the brownies according to package instructions. Let cool completely, for about 1 hour.

    Use the aluminum foil to lift and remove the brownies from the baking sheet and remove the foil. Use a round cookie cutter the size of your serving dishes to cut the brownies. Set brownie rounds aside.

    For the cheesecake: Mix the cream cheese and condensed milk with an electric mixer at medium-high speed until the cheese and milk are thoroughly combined and soft.

    Add the mint extract and food coloring. Continue beating the mix until creamy-smooth.

    To plate the dessert/to serve: In multiple dishes or small cups, start with a layer of brownie. Spread some of the cheesecake mix over the brownie round before adding another brownie layer. Repeat the layering process with all the dishes until you’ve used all the cheesecake mix.

    To decorate each dish, sprinkle some of the chopped, white-chocolate mint candies over the top of the dessert.

Expert Tips

  • tip 1
    In place of the brownie, use bits and pieces of crushed chocolate cookies. The texture will be different, but rica.

    For added garnish, try adding a dollop of whipped cream to each dessert cup.
