I never get tired of preparing quesadillas. I love having tortillas at home to prepare them with my favorite ingredients. One of my most delicious versions includes egg and sausage. It's great for breakfast! For this recipe, you can prepare the eggs like you normally do and include the ingredients you prefer.

Ingredients

  • 1 large flour tortilla
  • 1 sausage, thinly sliced
  • 2 eggs, beaten
  • 4 slices mozzarella or Jack cheese

Directions

    Heat the tortilla in a saucepan over medium heat, on both sides.
  • 2
    In another pan, cook the sausage. Once ready, add the egg and 2 slices of cheese on top. Prepare like an omelette.

    In the middle of your open tortilla, place the egg mixture and the remaining cheese. Close the tortilla.

    Brown for 2 minutes on each side until the cheese starts to melt.

    Serve hot.

    You can add other ingredients like bell peppers or mushrooms when making the eggs.

    For a low-calorie version, replace the flour tortillas with whole wheat tortillas, use egg whites only and low-fat cheese.
