Beef pot pies are a full meal and don’t need pasta or rice to be delicious; you only need a salad as a side. Also, if you plan ahead, you won’t need to spend hours in the kitchen: if you made a beef stew on Sunday, keep the leftovers and surprise everyone with beautiful pot pies in the middle of the week, since you’ll be able to prepare them in less than half an hour. Here’s also another secret: buy the dough ready to use, so you won’t need to spend too much time on it. Sometimes, the simpler the better, right?

Ingredients

  • Beef stew**
  • 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
  • 1 egg, lightly beaten

Beef stew:

  • 2 tablespoons vegetable oil
  • 1 lb. stew meat, diced
  • 1/2 cup onion, chopped
  • 2 garlic cloves, chopped
  • 3 tablespoons flour
  • Salt and pepper
  • 1 bay leaf
  • 4 cups beef stock
  • 1 cup carrot, chopped
  • 2 celery stalks, chopped
  • 2 potatoes, peeled and diced

    For the pot pies, preheat the oven to 400° F.

    Heat the oil in a pot. Add the pieces of meat slowly so the cubes get seared on all sides. Move to a dish and keep browning the meat.

    Then, fry the onion and garlic in that same oil until they’re soft. Mix the meat with the onion and sprinkle some flour. Stir well.

    Add salt and pepper, a bay leaf and beef stock. Bring it to a boil, cover the pot, lower the heat and cook for 1 1/2 – 2 hours.

    Half an hour before you finish cooking, add the chopped carrot, celery, and potatoes. Continue cooking, stirring occasionally and being careful not to mash the vegetables. The meat should be soft and the sauce should be thick. Adjust the seasoning. Let it cool down.

    Pour the stew into six pot pie pans, cover with six circles of dough, brush everything with the beaten egg and bake until it bubbles and all the pies are golden brown.
