Banana Crepes with Hazelnut Cream and Chocolate

Nothing makes me feel euphoria quite like chocolate. Sweet, smooth and rich, chocolate is one of my favorite dessert ingredients. Chocolate alone is delicious, but when combined with almonds, hazelnuts or walnuts, it's irresistible. Since my kids will eat anything covered in chocolate, I take advantage of the opportunity to add fruit to my pastries, like these banana crepes with chocolate and hazelnut. Delicious!

Ingredients

  • 1/2 cup Bisquick™ Original baking mix
  • 1 egg
  • 1 tablespoon of melted butter
  • 1/2 cup of milk
  • 1 teaspoon of sugar
  • 1/8 teaspoon of vanilla
  • 3 bananas
  • 6 tablespoons of chocolate hazelnut cream
  • Whipped cream or Chantilly cream
  • Ice cream (optional)

Directions

    Whip the Bisquick, egg, melted butter, milk, sugar and vanilla until the lumps disappear and the mixture has a soft liquid consistency.

    Heat a nonstick pan. Add a bit of butter and empty two tablespoons Bisquick mixture over the hot butter. Move the pan around to cover all the surface, return to the heat and flip when the edges turn brown and easily separate from the surface, about 20 seconds. Cook for another 15-20 seconds, remove the pan and repeat until you have finished the mixture.

    Given that crepes are very thin and cook quickly, you have to be careful of the temperature. I started at high heat with the first crepe and for the second I lowered it to medium. If you notice that the heat is a bit high but your crepe won't cook, lift the pan from the heat for a few minutes.

    Spread the chocolate hazelnut cream, add slices of banana and finish with a layer of whipped cream. Carefully roll up the crepe and repeat.

    Serve with ice cream, if you like.

    Crepes keep well when refrigerated or frozen. Be sure to separate with wax paper so they don't stick to each other.
