Avocado Gazpacho- an ideal hot weather dish

One of these hot, sunny days, surprise your family with something cool on the dinner table. During summer, we almost always prefer dishes that are quick and light, and a creamy avocado gazpacho is not only refreshing, but a savory way to vary the food on your table.

Ingredients

  • 6 Italian green peppers, seeds removed
  • 1/2 white onion
  • 1 cucumber peeled, seeded and cut into cubes
  • 1 tablespoon olive oil
  • 4 ripe avocados, not overly soft
  • Mineral water to adjust consistency (if too thick) if desired
  • 2 tablespoons of fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon White wine
  • 1/2 tablespoon salt
  • 1/8 teaspoon ground black pepper, as desired
  • 4 to 8 cubes (1/4 inch) toasted french bread croutons or 1/2 a cup of tortilla chips crumbled into large pieces.
  • 4 to 8 Shrimp or prawns cooked
  • Fresh cream, if desired

Directions

    Wash and dice all the vegetables. Place all the green ingredients except the avocado, in the blender. Add olive oil, blend and set aside.

    Cut the avocados in half and remove the pit using a spoon. Blend until ingredients form a soft puree.

    Mix the avocado puree with liquid from the vegetables and olive oil. Add lime juice, honey, wine, salt and black pepper.

    Cover the mixture. Place in the refrigerator until served. Serve in cup, soup dishes, or in avocado shell (serve immediately), if you are feeling creative! Serve with one or two pieces of the toasted croutons, a shrimp or a splash of fresh cream (if desired).
