En un refractario o platón grande de vidrio o en una bolsa de plástico de 2 galones resellable para guardar alimentos, mezcla todos los ingredientes, excepto el pollo. Añade el pollo, y voltéalo para que se cubra con el adobo. Tapa el plato o sella la bolsa y refrigera, girando al pollo de vez en cuando, por lo menos durante 3 horas, pero que no exceda de 24 horas.

Precalienta la parrilla de gas o de carbón (grill). Retira el pollo de la marinada; reserva la marinada. Coloca el pollo, con la piel hacia arriba, en la parrilla, y tápalo; cocina a fuego medio de 15 a 20 minutos.

Voltea el pollo. Tapa la parrilla; cocina de 20 a 40 minutos más, dando vueltas al pollo y untando marinada con una brocha 2 o 3 veces, hasta que el jugo del pollo esté claro cuando el pedazo más grueso se corte hasta el hueso (170°F para pechugas; 180°F para muslos y piernas). Desecha la marinada restante.
