Substitute the avocado for mayonnaise or prepare your own spread, combining 1 tablespoon of mayonnaise with the avocado and smashing with a fork until creamy.

Directions

  • 1 Preheat the oven to 400 °F.
  • 2 In a medium-sized container, combine the package of instant potatoes, 1 1/2 cups milk and eggs. Mix with a spatula.
  • 3 Add the waffle mix, baking soda, baking powder, salt and pepper, and 1/2 cup milk. Stir well.
  • 4 Preheat the waffle iron, pour 1/4 cup of the batter onto the griddle, distributing with a spatula if necessary. Close the waffle iron and cook until golden brown, for approximately 2-3 minutes each waffle. Repeat with remaining batter.
  • 5 Spread 1 tablespoon of mashed avocado over the top of 4 waffles, which will be used to create the bottom of this waffle sandwich. Layer with the cheese, turkey and cranberry sauce before closing the sandwich with a top waffle. (You can use a skewer or toothpick to keep the sandwich from falling apart) Bake for 5-10 minutes, until the cheese has melted.
  • 6 Remove from oven and serve immediately.
