cup finely chopped onion

jalapeño, seeded and chopped

cloves garlic, minced

pound yucca, cooked and diced

cups shredded cooked turkey
Fried eggs to serve

You can use chicken instead of turkey.

Hash is a dish made with a mixture of meat, potatoes, spices and vegetables and is very similar to picadillo. This recipe for turkey and yucca hash is a perfect way to use your Thanksgiving leftovers. Picadillo is one of my favorite breakfast dishes, maybe because it reminds me of my childhood when my grandmother would prepare them for breakfast or lunch with leftover sancocho or dinner. Now I enjoy preparing this dish for my kids so I can continue creating simple, economical and easy dishes.

Directions

  • 1 Heat the olive oil in a large pan. Add the pepper, onion, jalapeño, garlic, cumin, salt and pepper. Cook over medium heat, stir occasionally and cook until everything is soft. About 5 minutes.
  • 2 Add the yucca and the turkey. Stir with a wooden spoon. Cook at high heat until it browns, from 3-5 minutes.
  • 3 Season with salt and pepper and divide the hash into individual dishes. Add one fried egg to the surface and serve immediately.
