We went to my 8 year old nephew's birthday party over the weekend and had a blast. There was very simple stuff served but filling and delicious. The main course was New York-style submarine sandwiches. I never thought of subs as being able to handle the food needs of a whole party but they did, and did it well! They were filled with 4 types of cold cuts, the bread was softly amazing, and did a good job at stuffing up 8-year-old active kids that were running around for 6-7 hours.

Ingredients

  • 2 - 2 1/2 foot-long French loaves
  • 1/2 lb coto salami, thinly sliced
  • 1/2 lb ham, thinly sliced
  • 1/2 lb genoa salami, thinly sliced
  • 1/2 lb mortadella, thinly sliced
  • 1 lb provolone cheese, thinly sliced
  • 15 pepperoncinis
  • 4 tablespoons Italian dressing
  • 15 pickle slices
  • 1 cup chopped lettuce
  • 10 tomato slices

Directions

    Slice bread loaves, lengthwise.
  • 2
    Equally distribute meats and cheese between the two loaves.

    Sprinkle 2 tablespoons of Italian dressing into each loaf.

    Top meats and cheese peperoncinis, pickle slices, chopped lettuce, and tomato slices.

    Cut each loaf into 5 equal pieces. Enjoy!
