Directions

  • 1 Trim ends of beets and place on a sheet of foil, drizzle with 2 tablespoons of olive oil, sprinkle with salt and wrap loosely to seal edges.
  • 2 Place on a baking sheet. Bake for 1 hour or until fork tender; cool completely.
  • 3 Peel off the outer skins, slice and place in serving dish.
  • 4 In a non-stick skillet combine the remaining 2 tablespoons olive oil, butter, honey, zest and orange juice. Bring to a boil; reduce heat and drizzle over beets. Serve warm.
