Directions

  • 1 Add the eggs and spinach into a blender and mix until everything is green in color. Add salt and pepper to taste.
  • 2 Place a saucepan on the stove and add a little bit of safflower oil. When the oil is hot add the egg and spinach mixture and cook on both sides.
  • 3 Cook the ham for a few minutes.
  • 4 Serve the green eggs with ham on a place and decorate with tomatoes and parsley sprigs.
