ripe plantains, cut into slices
1/3
cup oil for frying

eggs

tablespoons finely chopped onion

tablespoons finely chopped cilantro
1/2
cup ham, cut into small cubes
3/4
cup grated mozzarella cheese
Salt and pepper to taste

Expert Tips

The omelet can be eaten cold or hot. You can substitute the ham for chorizo.

Directions

  • 1 In a pan, fry the plantain slices in hot oil and drain them on paper towels.
  • 2 Mix the eggs with the onion, salt, and pepper.
  • 3 Lightly grease a nonstick pan and pour three tablespoons of the egg mix. Place some of the plantain slices on top, some ham and cheese, and finally, pour a little more of the egg mix.
  • 4 Continue in the same order until you've used up all of the ingredients.
  • 5 Cook over medium heat, with the pan covered, for about 12 minutes. Turn the omelet over, remove from heat, and allow to cool.
  • 6 Cut the omelet into triangles, and sprinkle some cilantro on top.
