Arepas Stuffed with Turkey Salad, Avocado and Cheese

During the holidays, particularly during Thanksgiving and Christmas, many of us prepare the all-time classic turkey. I for one go by the motto “the larger, the better.” The one drawback about it is that we're a small crowd at home, so I'm usually stuck with a leftover turkey galore! Directions

  • 1 In a large bowl, combine turkey, onion, mayo and avocado. Mix well to combine, taste for salt and pepper and add more to taste.
  • 2 Cut the arepas open with the help of a knife and stuff with turkey salad and grated cheese.
  • 3 Serve hot.
