You will never have a boring breakfast or snack again after tasting this yogurt and pumpkin parfait, and now that this is the best time for pumpkins, I’m sure you’ll prepare it all the time. Whether you’re grilling or boiling it before serving alongside your favorite meals, this is a great alternative for when you have some extra pumpkin and don’t know what to do with it.

Ingredients

  • 1 (1 lb.) small pumpkin
  • 4 cups strawberry Yoplait® plain yogurt
  • 1/2 cup light agave nectar

Directions

    Preheat the oven to 350°F. Spray a tray with cooking spray. You’ll need 4 small glasses or parfait glasses.

    Wash and cut the pumpkin into halves. Remove the seeds with a spoon and cut into slices.

    Place them on the tray, pour the agave nectar over the slices and bake for 20-25 minutes at 350 °F.

    Let it cool down. Using a knife, remove the peel and dice into small cubes.

    Pour 1/2 cup yogurt, add some pieces of pumpkin. Serve the pumpkin parfait with coconut and pumpkin seeds or granola.

Expert Tips

    This variety of pumpkin is already sweet, but you can also sprinkle 1 tablespoon of brown sugar if you want.

    You can also sprinkle some cinnamon over the pumpkin.
