Although we use dark beans often in many of our dishes, I can never forget the wonderful texture and rich taste of white beans. This salad is a perfect way to showcase its flavor; just a few ingredients combined to create a delicious appetizer. MORE + LESS -

Ingredients

large tomatoes

slices of fresh mozzarella cheese

can Progresso™ Cannellini beans

cups arugula

tablespoons olive oil

tablespoons white vinegar
Salt and pepper to taste

    Cut the tomatoes into thick slices.

    Place the tomatoes on a plate and top with the mozzarella cheese slices.

    Add the white beans over the cheese, and then the arugula leaves.

    In a separate bowl, mix the olive oil, vinegar, salt and pepper.
  • 5
    Pour this dressing over your salad and serve immediately.

Expert Tips

  • You can substitute the fresh mozzarella for Burrata cheese.
