Tuna Stuffed Peppers

We recently tried preparing these tuna stuffed peppers, and we were pleasantly surprised by their flavor. I was even more surprised when I realized how easy it was to prepare them! I’m sure you always have a spare can of tuna in your kitchen, but it may be difficult to think of different ways of preparing it. This is the perfect opportunity to enjoy something less traditional. Mix the tuna with vegetables and mayo, and use this mix to stuff the peppers before covering them with lots of cheese. Sounds good, right?

Ingredients

  • 1 poblano chili pepper
  • 1 can of tuna
  • 1/2 cup kernel corn, cooked
  • 1/4 cup carrot, grated
  • 2 tablespoons mayonnaise
  • Grated cheese

Directions

    To remove the skin from the chilies, you have to rub some oil on them and place them straight over the fire. Wait for the skin to darken.

    Immediately after, cover them in plastic for at least 10 minutes.

    After it’s been 10 minutes, put the chilies in cold water and remove the skin. Take the seeds of the chili out by making a small hole on them.

    Mix the tuna with the corn, carrots, and mayo.
  • 5
    Stuff the chilies with the mix and then cover them in cheese.

    Bake them until the cheese melts and serve them hot.
