cup olive oil

tablespoon red wine vinegar
Salt and pepper, to taste

cloves garlic, finely chopped

cup basil, julienned

ozs cherry tomatoes

lb brie cheese, cubed

    Cook the pasta according to package instructions.

    While the pasta cooks, add olive oil, red wine vinegar, salt and pepper to a serving bowl and whisk well. Add the garlic and basil and allow to marinate (the longer the better).

    When done, add warm pasta and fold in the tomato and brie. The heat will slightly melt the cheese and create a sauce. Serve immediately.

  • This is a hearty pasta dish. Serve with a green salad for a satisfying, meatless meal.
