Prepared with leftover black beans, lentils or peas-which we call alverjitas partidas- they always turn out delicious and are easy to prepare. Plus, they are full of flavor and very nutritious. Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup red onion, diced
  • 2 garlic cloves, diced
  • 1 tablespoon ají amarillo, diced (optional)
  • 2 cups leftover peas, (alverjitas partidas)
  • 1 1/2 cups leftover cooked rice
  • 1 cup bread crumbs
  • 6 hamburger buns (or sliced bread if you prefer)
  • 6 lettuce leaves
  • 1 tomato, sliced
  • 1/2 cucumber, sliced
  • salt and pepper
  • radishes, cut into round slices
  • carrots, cut into thin round slices
  • olive oil (for dressing)

Directions

    Heat two tablespoons of vegetable oil in a saucepan over medium heat. Add in the onion and garlic, then cook until softened. Add the diced yellow pepper and stir well.

    Incorporate the leftover peas, stirring well so that all the ingredients combine evenly. Afterwards, mix-in the rice and continue cooking. The mixture should have the texture of a very thick purée. Remove from heat and let cool to room temperature.

    When the mixture has cooled, form individual patties with the purée and cover each side in the bread or cracker crumbs.

    In another frying pan, heat the remaining vegetable oil over medium heat and fry the hamburgers until they are golden brown on both sides.

    When ready, place each hamburger on a plate over your preferred bread with lettuce, tomato and cucumber. You can decorate the rest of the dish with the radish and carrot slices. Sprinkle with salt, pepper and olive oil.

    This recipe is delicious and very easy to make with your common legume leftovers. Lentils or beans of any kind can be used in the recipe. The rice should be chilled before-hand.

    Eliminate the ají amarillo if you are going to serve these hamburgers to children.
