Stuffed Artichoke Hearts

Appetizers can mean several things depending on the context in which they are served. We all know that an appetizer in a restaurant is a smaller-sized entrée. When it comes to party appetizers, on the other hand, what comes to mind is a big variety of hors d'oeuvres that you can fill your plate with as many times as you want. In Peru we call this action "piqueo", and it's one of my favorite ways to eat! Who doesn’t like to nibble on a little bit of everything? When it comes to the most fun summer celebration of them all–BBQs– these foods are what keep everyone going while waiting for whatever is on the grill to be ready. The bigger the variety, the merrier. If you want to breeze through your next summer celebration, check this stuffed artichoke hearts out. This appetizer recipe is the easiest thing to make in the world, it calls for just a few ingredients, and it doesn't involve any cooking!

Ingredients

  • 1/2 cup hummus
  • 1/2 cup finely-chopped spinach leaves
  • 2 cans Progresso™ artichoke hearts
  • 1/4 cup green olives
  • 1/4 cup alfalfa sprouts

Directions

    Mix the hummus and chopped spinach in a cup.
  • 2
    Place the artichoke hearts cut in half on a dish. Cover each half with about 1 teaspoon of the hummus and spinach spread.

    Slice the olives, and put one slice on top of each artichoke half.
  • 4
    Cut the alfalfa sprouts in 1/2 -1 inch pieces, take about 4-6 pieces, and press them a little bit into the hummus, through the middle of each olive slice (see picture).

    Serve.

    If you don't have hummus, you can use cream cheese or ricotta instead.
