Strawberry and Arugula Salad

Summer brings with the arrival of delicious strawberries. Personally, they're one of my favorite fruits. I love their exquisite taste and versatility. The best strawberries are those that come from the Farmers Markets, where the local growers of fruits and vegetables go to sell their produce. I get so excited about enjoying fresh strawberries before going to the grocery store because I get to come home to prepare this delicious salad.

Ingredients

  • 1/2 cup strawberries
  • 1/4 teaspoon sugar or honey
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt to taste
  • 2 cups arugula
  • 1/2 cup walnuts

Directions

  • 1
    Wash the strawberries and cut them into slices.
  • 2
    Place in a bowl and cover them in sugar, balsamic vinegar and oil. Let sit for 5 minutes.

    Serve the arugula in a bowl and dress with the vinaigrette and strawberries.

    Add salt to taste and then the chopped nuts.

    Mix well and serve immediately.
