Arroz con leche is a favorite treat at my house. By letting the rice cool and get a bit sticky, you can create some tasty rice bites with your favorite fruit and sweet topping. Perfect for a spring picnic or outdoor family get-together, these dessert bites are visually appealing just as they are delicious and welcomed at any outdoor party. MORE + LESS -

Ingredients

cups white rice

cups milk

tablespoons sugar

vanilla pod, sliced open lengthwise

large banana, sliced

large strawberries, sliced
Mint leaves for garnish

cup cajeta

    Rinse rice in cold water.

    In a medium saucepan over low-medium heat, heat milk, rice, sugar, and vanilla pod. Stir and bring to a boil; lower heat to simmer. Cover and cook for 25 minutes. Stir frequently with wooden spoon. Rice will be very sticky. Discard vanilla pod.

    Line a baking sheet with parchment paper and spread rice on sheet, distributing it evenly. Let cool.

    Pick approximately 2 tablespoons of rice with hands, roll into a ball, and set on a serving plate.

    Garnish with banana slices, strawberry slices, mint leaves and cajeta.

  • Top with your favorite sweet sauce or yogurt.
