Sofrito Turkey Tostadas with Sweet Potato

Like tacos, tostadas can be prepared in so many different ways depending on what you like. This turkey tostada recipe was inspired by my mom’s picadillo con papas recipe that I grew up with. Instead of beef, I added ground turkey, and replaced russet potatoes with sweet potatoes. The corn adds a nice crunch and sweetness to the dish as well.

Ingredients

  • 12 corn tortillas
  • 1/4 cup olive oil
  • 2 sweet potatoes, peeled and diced (about 1 lb)
  • 5 cups water
  • 2 cups Roma tomatoes, diced
  • 1 cup green bell pepper, diced
  • 1 cup sweet onions, diced
  • 2 cloves garlic, sliced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 lb ground turkey
  • 1/2 teaspoon garlic powder
  • 1 chipotle in adobo, minced
  • 2 tablespoons adobo sauce from chipotles
  • 7-oz can diced green chiles
  • 1/2 cup corn
  • 4 cups shredded lettuce
  • 2 cups shredded Monterey Jack cheese
  • 1 lime sliced into 12 wedges

Directions

    Preheat oven to 375°F. Line two baking sheets with foil paper. Brush the corn tortillas with olive oil on both sides and transfer them to the baking sheets.

    Combine the sweet potatoes and 5 cups of water in a pan. Bring to a boil, reduce heat and cook until fork tender.

    In the blender add 1 cup tomatoes, 1 cup bell peppers, 1/2 cup onions, 2 garlic cloves, 1/4 cup cilantro, 2 tablespoons vinegar, 1 teaspoon oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper. Blend on high until smooth; taste for salt.

    Transfer one baking sheet of tostadas to the oven. Bake for 18 to 20 minutes, turning over halfway through cooking time. Repeat with second pan and set aside.

    Add 2 tablespoons of the remaining oil to a skillet. Heat to medium. Add the remaining onions and cook for 5 minutes. Raise the heat, add the turkey, 2 more tablespoons olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper and 1/2 teaspoon garlic powder. Cook for 10 minutes or until nicely browned.

    Drain the sweet potatoes and add them to the pan, along with chipotle, adobo, green chiles, corn and sofrito from the blender. Stir well to combine and cook for an additional 20 minutes. Taste for salt and pepper. Top the tostadas with turkey and garnish with lettuce, tomato, cheese and lime juice.

    Baking the tostadas is a great time saver. They cook in half the time and you will use a lot less oil.
