The 4th of July celebration means you must have typical BBQ products ready to go like burgers, ribs and hot dogs, served with condiments and sauces. Since it's a party that can last hours, it's important to have tasty appetizers. Because I live in California, Mexican food is part of many of the American holidays and this Shrimp Salpicón is one delicious way to add tons of flavor to our Independence Day Celebration.

Ingredients

  • 1 lb small shrimp, cooked
  • 1 chopped tomato
  • 1/2 small white onion, chopped
  • 1 garlic clove, minced
  • 1 fresh jalapeño, seeded and sliced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper
  • 1 avocado
  • 6 limes

Directions

    Peel the cooked shrimp and place them in a container. Mix the shrimp with the tomato, onion, garlic, lime juice and jalapeño.

    Add the olive oil and parsley. Season to taste with salt and pepper.

    Serve with avocado and tortilla chips. Add slices of lime as garnish.
